The bison ribeye is cut from the primal section of our South Dakota born and raised bison. Sometimes they come as ribeye steaks, and if you’re lucky, sometimes they come as rib steaks with the handle sticking out. Either way, these steak cuts are a nice combination of the satisfying size of a Strip Steak with a more tender, slightly more fatty texture. If you want to impress family for the holidays, try doing it with the one thing everyone has always wanted to try, a South Dakota buffalo ribeye. Do NOT let the grill master over cook these babies!! Salt with pepper and three minutes a side!
